Spanish Rice
Last night I met with a group of some of my best friends for a delicious home-cooked Mexican-style dinner. My cooking assignment (which I chose to accept) was to prepare a side dish to match the Mexican theme. After much careful thought and research, I decided to make Spanish rice.
I followed this simple recipe and was very pleased with the results. The rice was delicious and flavorful, and paired nicely with the other dishes.
The next time I make this I am going to follow the suggestions to cover the cooked rice with cheese and bake it in the oven. Although the rice was very good on its own, who am I to say “no” to some melted cheese every now and then?
