My weekdays are usually pretty busy with work. So, I really enjoy spending part of my weekend engaged in some sort of baking or cooking “project.” For a few months, I had wanted to try to make biscuits from scratch, but I was always too intimidated to try. Until this weekend….
These drop biscuits, from my Better Homes and Gardens Cookbook, were actually pretty easy to make and the results were delicious. (They are called “drop biscuits” because they were dropped by spoonfuls onto the baking sheet instead of being rolled and cut out of the dough.)
The next time I make these I want to try substituting in some whole wheat flour and maybe adding sharp cheddar or some sort of herb to the batter. This recipe could probably be altered in many ways and I can’t wait to try some of them out!

It rained all day long today. As much as I’m longing for a little sunshine, I can’t help but really love rainy days and their coziness. It was nice to spend my evening eating comfort food, reading, and listening to the rain.

Last night I met with a group of some of my best friends for a delicious home-cooked Mexican-style dinner. My cooking assignment (which I chose to accept) was to prepare a side dish to match the Mexican theme. After much careful thought and research, I decided to make Spanish rice.
I followed this simple recipe and was very pleased with the results. The rice was delicious and flavorful, and paired nicely with the other dishes.
The next time I make this I am going to follow the suggestions to cover the cooked rice with cheese and bake it in the oven. Although the rice was very good on its own, who am I to say “no” to some melted cheese every now and then?

I started Sunny with a Chance of Sprinkles so that I could have a place to document the things in my life that make me happy, such as food, cooking, local events, everyday photography, and other sources of inspiration.
